Easter is coming! And over here Resurrection Rolls have become a bit of a tradition. However, we have another great love in our bicultural home and that is Pan Dulce! So this year we decided to mix it up a bit with a Concha-Inspired Resurrection Roll.
My oldest is so clever, I asked her if we should make Resurrection Rolls for Easter.
She answered ‘well…you know pan dulce is better.’
She’s not wrong.
Then the wheels in her head started turning. She announced ‘Why don’t we make Resurrection Pan Dulce.’
So here we are: Concha-Inspired Resurrection Rolls.
It has all the same symbolism as the traditional Resurrection Roll…a marshmallow that represents Jesus, but then disappears while baking to make an empty tomb roll… but a sweet crust on top, that when painted green looks like grass.


What you need:
- Concha Recipe (If you have a recipe you love, by all means use it. However, we love this Conchas recipe from Mexico in my Kitchen. I’m convinced it’s fool proof. I’ve been making it for years and everytime they turn out fantastic).
- 12 Marshmallows
- Green food coloring gel

What you do:
- Make your concha masa (dough) following the recipe instructions.
- After first rise, separate masa into 12 equal parts.
- Wrap each ball of masa around a marshmallow. Let rise a second time.
- While masa rises, make your topping following recipe. Add 1 tube green food coloring gel.
- Preheat oven to 325°F. Cut-out topping and place on top of bread. Bake for 20-30 minutes or until golden brown.
- Let cool, then enjoy. Cut open the conchas and marvel that they are empty, just like the tomb when Jesus rose on Easter Sunday.

Tips:
- While kneading, make sure your dough is smooth and elastic. Bread making is part science, part art. The texture of your dough is everything! Knead and knead until it’s smooth like playdough (there is a reason they call it playdough).
- We use a pastry cutter to add the concha design to our crust. It’s a simple way to give the concha that iconic look.
